Mocha Chocolate Chip Muffins

Neither of us drink coffee, but we like coffee-flavored ice cream and coffee-flavored muffins. These muffins are packed with chocolate chips, and if you're a coffee-lover, you'll be in heaven. I'm not quite sure what happened on Saturday morning, but our muffins all stuck to the pan (as you can see on the bottom left). We've made this recipe at least a half dozen times and never run into that issue, so I guess it was a fluke. Despite how annoying they were to get out of the pan, we still enjoyed them mightily.

Mocha Chocolate Chip Muffins

  • 2 cups all-purpose flour
  • 1 cup + 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (1 stick) butter
  • 2 tbsp cocoa powder
  • 1 tbsp instant espresso powder
  • 2 large eggs
  • 2/3 cup milk
  • 1 tsp vanilla extract
  • 1 1/4 cup chocolate chips

  1. Preheat oven to 375 degrees F. Line a 12-cup muffin tin with liners or spray with cooking spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Set aside.
  3. Melt butter in a small microwaveable bowl. Stir cocoa powder and espresso powder into melted butter while warm. Set aside. 
  4. In a small bowl, whisk together eggs, milk, and vanilla. 
  5. Add butter mixture and egg mixture to dry ingredients and stir until combined. Stir in chocolate chips. Batter will be thick.
  6. Divide batter between muffin cups until heaping with batter. 
  7. Bake for 18-20 minutes, until a toothpick inserted comes out clean.
