Neither of us drink coffee, but we like coffee-flavored ice cream and coffee-flavored muffins. These muffins are packed with chocolate chips, and if you're a coffee-lover, you'll be in heaven. I'm not quite sure what happened on Saturday morning, but our muffins all stuck to the pan (as you can see on the bottom left). We've made this recipe at least a half dozen times and never run into that issue, so I guess it was a fluke. Despite how annoying they were to get out of the pan, we still enjoyed them mightily.
Mocha Chocolate Chip Muffins
(Recipe from Baking Bites)
- 2 cups all-purpose flour
- 1 cup + 2 tbsp granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup (1 stick) butter
- 2 tbsp cocoa powder
- 1 tbsp instant espresso powder
- 2 large eggs
- 2/3 cup milk
- 1 tsp vanilla extract
- 1 1/4 cup chocolate chips
- Preheat oven to 375 degrees F. Line a 12-cup muffin tin with liners or spray with cooking spray.
- In a large bowl, whisk together flour, sugar, baking powder, and salt. Set aside.
- Melt butter in a small microwaveable bowl. Stir cocoa powder and espresso powder into melted butter while warm. Set aside.
- In a small bowl, whisk together eggs, milk, and vanilla.
- Add butter mixture and egg mixture to dry ingredients and stir until combined. Stir in chocolate chips. Batter will be thick.
- Divide batter between muffin cups until heaping with batter.
- Bake for 18-20 minutes, until a toothpick inserted comes out clean.
